This menu takes the exotic and sumptuous flavors of middle-eastern cuisine and the wonderful, fresh, Mediterranean ingredients to create a luxurious buffet to make the wedding feast an unforgettable one.

 

Befores

  • Leg of lamb rubbed in almond, allspice, cumin and pomegranate molasses, hot out of the wood-fired oven.
  • Boneless chicken thighs stuffed with feta, garlic, preserved lemon and smoked paprika, wrapped in a bananaleaf and barbecued.
  • Hot smoked salmon, fennel and labneh salad.
  • Cracked bulghar wheat and mint tabouleh Salad.
  • Date, pine nut and pistachio Israeli couscous pilaf.
  • Wood fired oven roasted mediterranean vegetables with hummus and Sumac.
  • Ribboned cucumber and fresh herb salad with a goat ́milk yoghurt dressing.
  • Portabello mushrooms barbecued with goats cheese, garlic and Za’atar

 

Dessert

  • Fine cheeseboard with artisan crackers and breads.
  • Pomegranate and pine nut baklava with rosewater whipped
    cream Roasted pistachio and cardamom ice cream.
  • Chilli and flaked sea salt dark chocolate cake.
